I have a home bakery, sell my baked goods at a local farmers market every Saturday morning. The Kernza boules and batards are the first things sold out, even being sold at a slightly higher price! Just ordered my first wholesale order, 25 lb. bag of Kernza whole grain. I grind in my Wonder Mill. I am going to try the Kernza scones this week and am hoping my customers will love them as much as they love the bread!

I have been using Kernza in my whole wheat bread for about 6 weeks now. I sub 2 cups of it for 2 cups of WW flour (7 cups total). The taste it adds is delicious, subtly sweet (at least to my taste buds!) and nutty. It’s doesn’t negatively impact the texture. Glad I found it.

the lighter print sections of each recipe is difficult to read. Could you format the files to print uniformly dark.
