Kernza flour

This was my second purchase of 40 pounds of kernza flour. I love kernza--I use it now in everything I bake. I find I can make delicious muffins and pancakes from 100% whole grains when I use kernza in place of the white flour I would use and use whole wheat pastry flour for the balance--it comes out light, without any bitter aftertaste as can happen with whole wheat pastry flour. I have even had good success using kernza in pie crust, with only a minimal reduction of oil. kernza now lives on my countertop as my most used flour.
