Very tasty!

I will by buying more and sending it as gift. I have used the whole grain Kernza instead of farro in a couple of recipes and it is very tasty. I'll be posted recipes to the community and looking for more ideas.

Used in bread baking

I really like the flavor of Kernza. As noted in the WP article, it has less gluten than regular wheat flour. Seems to bake up in bread much like rye flour. Used it in my whole grain sourdough bread. It's great to have a sustainable alternative to annual wheat. Keep up the good work on your development of this geat grain.

Good stuff

I soaked a cup of the grain overnight and cooked it the next morning. Now I am looking forward to making bread with the flour.

Great taste, texture, recipe flexibility

Kernza's kernels softened and expanded after soaking and simmering according to the package directions, producing a wonderful al dente slightly chewy texture. The kernels in my package were very well cleaned. (I'm growing some garden Kernza, so I know how difficult it is to remove the hulls.) The few kernels (six in one cup) that were still encased in their hulls floated to the surface of the soaking water, where they were easy to skim out before cooking. (I squeezed the kernels out of their hulls, and returned the kernels to my pan. Kernza is especially satisfying sweetened with honey and mixed in with oatmeal or other cereals, but the mildly nutty flavor balances savory recipes, also.
